Priced at P4,888+ per head, the Valentine's-themed Omakase is a carefully curated journey through Japanese flavors, highlighting the exceptional Ito Ranch Matsusaka A5 Japanese Wagyu and the prestigious 2025 Wagyu Olympics Cut.

Here's the 8-Course Valentine's Omakase Menu


Course 1: Tataki Salad

Thin-sliced aburi Matusaka • Ponzu dressing • Garden greens


The delicate, thinly sliced aburi Matsusaka danced with fresh garden greens, all embraced by a tangy ponzu dressing. This wasn't just any dressing; it was an emulsified masterpiece, balancing sweet, salty, and sour notes to unlock a profound umami richness. We watched, mesmerized, as each bowl was meticulously prepared and beautifully plated, the beef carefully torched to perfection.



Course 2: Nigiri

Witnessing the chef craft Nigiri with bare hands (a traditional Japanese practice designed to enhance the meal's quality and experience) it was truly special for me!.


A perfect bite of raw Matsusaka atop warm Shari (シャリ) is the specially seasoned, vinegared rice (the "soul of sushi," as they call it), glazed with a light and brushed with tangy yuzu nikiri glaze (delicate glaze combining traditional soy sauce, mirin, sake, and the fragrant citrus fruit yuzu is applied to sushi with a brush. This technique is used to enhance the flavor of the fish without overwhelming it with too much salt.) , and crowned with black summer truffle that gives nutty, earthy, and mushroom-like, with a delicate, subtly sweet, and sometimes mildly garlicky taste.




Course 3: Tartare

Hand-chopped Matsusaka • Onion purée • Nori canapé

These bite-sized, Japanese-inspired appetizers featured hand-chopped Matsusaka, elevated with onion purée, served in delicate nori cups. Small but exquisitely crafted, each tartare was garnished with delicate flowers, providing a fresh and aesthetic contrast to the rich, marbled beef.


Course 4: Sukiyaki Consommé

Raw Matsusaka • Tofu • Mushrooms • Seasonal vegetables


My absolute favorite! A comforting, sweet, and savory soy-based broth cradled raw Matsusaka, tofu, mushrooms, and seasonal vegetables. The presentation was stunning, and the fact that they prepared it right in front of us made it even more special.


Course 5: Usuyaki

Thinly sliced Matsusaka, seared alongside seasonal fungi and vegetables, then rolled together and drizzled with a rich Bordelaise jus. This was incredibly flavorful, rich, and tender.



Course 6: 2025 Wagyu Olympics Cut

Celebrated at the Wagyu Olympics, this perfectly cooked A5 Tenderloin (medium rare) came with finishing salts, garlic chips, yuzu kosho, and seasonal vegetables. It literally melted in my mouth! The garlic chips were a win, and this Wagyu Olympics cut was undoubtedly the highlight of the course.


Course 7: Chahan

Fragrant Japanese rice infused with hand-chopped Matsusaka, aromatics, spring onion, and decadent Matsusaka butter. Served with finishing salts, it elevated the taste to new heights of deliciousness, with the garlic adding an extra layer of perfection.


Course 8: Premium Gelato: A refreshing Hana Gelato with watermelon and mint granita—a perfect conclusion to the savory symphony. I so loved it!
